豆腐皮制作技術
一、豆腐皮制作技術
1.選當年黃豆,揀篩干凈。用粉碎機破碎至脫去豆皮或成2-4瓣。
2.把破碎好的豆子洗兩遍,撈去豆皮,放在25℃水中泡4小時。
3.把豆放人磨漿機或石磨內,邊磨邊加水,0.5公斤黃豆加4公斤水,磨兩遍,不能磨得太細,可用手指捻成小顆粒為宜。
4.用分離機把豆渣和漿分開。分離機內的濾籮為80—90目。在農村,可用磨水豆腐用的豆腐濾布,濾好后煮漿,溫度控制在93t左右。
5.用小木條把2米長、1.5米寬、15厘米高的平底鍋分成6個方格。下裝暖氣道,使鍋底溫度保持在70~90~C,把煮好的豆漿倒人鍋內,3-5分鐘后,格內即可結皮,待皮出現小皺紋時,即可揭皮。依次把每個小方格內的皮揭完。一鍋豆漿可揭10多次,能出4公斤-5公斤豆腐皮。
和豆腐之前的工序一樣,后面的就是點腦,打腦,潑皮,壓榨,脫布,就是成品了,點腦是很關鍵的,點腦的水平決定豆皮的質量,口感。
火燒豆腐皮
材料 豆腐皮、豬肉餡、蔥、姜、蒜、料酒、生抽、鹽、胡椒粉、淀粉、雞粉、紅油
紅燒豆腐皮肉卷的做法
1、姜剁碎,加入肉餡中,少許生抽、料酒、胡椒粉、雞粉調味,順一個方向攪勻。
2、分次添加少許清水,繼續順一個方向攪打上勁。
3、豆腐皮提前用溫水泡發,用剪刀裁成小正方形。
4、肉餡捏成長條狀,擺在豆腐皮中央。
5、先將豆腐皮的一角向上折起,水平方向的兩個角也分別對折。
6、最后一個角上抹點干淀粉,將收口粘住。
7、收口朝下,全部包好的肉卷整齊擺放在盤中。
8、平底煎鍋燒熱,刷少許油,小火,下豆腐皮肉卷兩面煎至金黃。
9、煎好后,繼續收口朝下,盛出擺入盤中。
10、利用鍋中余油,爆香蒜末,加入高湯,鹽、雞粉、紅油調味。
11、煮沸后,下煎好的豆腐皮肉卷,小火燜至湯汁濃稠,撒上蔥絲即成。
